INGREDIENTS

  • 1 Jar

  • 1 Cloth

  • 1 Rubber Band

  • 1 Wooden Spoon


  • 1 Can Cocunut Milk Not Cream

  • 3 tbsp Sauerkraut Juice

INSTRUCTIONS

  • Place coconut milk in a sterile jar

  • Add 3 tbsp of sauerkraut juice

  • Mix with a wooden spoon

  • Cover with a cloth and rubberband and let it sit for 12-14 hours. The mix should be firmer but not hard.

  • Stir and put in the refrigerator for 2 hours before serving. The milk should be creamy like Greek yoghurt

  • Lasts 2-3 days in the fridge

Note:

Sauerkraut is full of good bacteria for the gut. Sauerkraut is high in histamine. The small dosage of sauerkraut juice in this yoghurt is tolerated well by most sensitive children. Sprinkle hempseed, and pomegranate on top for a yummy snack!
Many coconut milks do not work for this recipe. I found that the Santa Maria Coconut milk makes a good creamy consistency, similar to Greek yoghurt.
