Creamy Mango Chicken

One of my kid's favourite ways to eat chicken! Often requested here – I find this a lovely way to introduce some protein rich chicken into some of my more picky client's diets. Left over chciken can be shredded and whipped up into something a little sweet and creamy and less boring and bland.

INGREDIENTS

  • 2 Cup Left Over Cooked Chicken

  • 10 tbsp Mayonnaise

  • 1 tbsp Turmeric

  • 1 tbsp Mango Chutney

  • 1 Pinch Salt

INSTRUCTIONS

  • Take your leftover chicken and shred it with a fork in a large bowl

  • In another bowl add the mayo, garam masala, turmeric, mango chutney, and salt and stir together until combined well

  • Add the shredded chicken to the bowl and mix well

  • Serve as a filling for cassava wraps, lettuce wraps, jacket potatoes, or over rice

Note:

If you have no leftover chicken but want to use this recipe – poaching chicken breasts keeps them soft and moist and perfect to shred and mix.
