Creamy Mango Chicken
One of my kid's favourite ways to eat chicken! Often requested here – I find this a lovely way to introduce some protein rich chicken into some of my more picky client's diets. Left over chciken can be shredded and whipped up into something a little sweet and creamy and less boring and bland.

INGREDIENTS
2 Cup Left Over Cooked Chicken
10 tbsp Mayonnaise
1 tbsp Turmeric
1 tbsp Mango Chutney
1 Pinch Salt
INSTRUCTIONS
Take your leftover chicken and shred it with a fork in a large bowl
In another bowl add the mayo, garam masala, turmeric, mango chutney, and salt and stir together until combined well
Add the shredded chicken to the bowl and mix well
Serve as a filling for cassava wraps, lettuce wraps, jacket potatoes, or over rice
Note:
If you have no leftover chicken but want to use this recipe – poaching chicken breasts keeps them soft and moist and perfect to shred and mix.
