INGREDIENTS

For the jelly –

  • 2 cups of orange juice 

  • 2 clementines

  • 1 pomegranate 

  • 3 tablespoons of grass fed gelatin

For the vanilla cream layer –

1/2 a cup of cashews soaked soaked for 4 hours in water and drained 

1 cup of coconut cream 

1 teaspoon of vanilla extract

2 tablespoons of honey/ maple syrup or to your taste 

20g of chocolate grated -I use Supertreats_UK brand, because it is caffiene free, no dairy, gluten or refined sugar 

Other things you will need:

Small pots or glasses to serve 

INSTRUCTIONS

  1. For the jelly place the gelatin into a saucepan (no heat) pour 1/2 cup juice in – allow it to thicken for 2 minutes 

  2. Add the rest of the juice and heat on low. Allow the gelatin to dissolve. Remove from heat. 

  3. Peel clementines and put segments into a glass, add some of the pomegranate jewels too. 

  4. 3/4 fill glass with juice/ gelatin mixture. 

  5. Refrigerate until jelly has set – around 1/2 hour 

  6. Whilst waiting blend cashews/coconut cream until smooth then stir through vanilla and honey. 

  7. Place this on top of set jelly and refrigerate again. After around 4 hours it’ll be thick and set. 

  8. Sprinkle over more pomegranate jewels and then grate on some chocolate.
