Omelette Pizza
A very easy quick nutritious meal which can be served for breakfast, lunch or dinner. Eggs are full of choline – which is brilliant for brain health!

INGREDIENTS
4 Eggs
1/4 Red Bell Pepper
1/4 Yellow Bell Pepper
1/2 Cup Chopped Greens
1/2 Cup Nitrate-free Paleo/ Organic Sausage Chopped into small pieces
1 tbsp Avacado Oil
1 Pinch Salt and Pepper
INSTRUCTIONS
Crack 2 eggs into a cup and whisk together with a fork
Add salt and pepper as desired
Heat a cast iron pan on low heat and place 1 tsp of avocado oil into the pan. Take a clean tea towel and smear the oil around the pan to coat it
Take your eggs and pour them into the pan – tipping the pan to swirl it around so that the egg mixture covers the pan
Turn up the heat to medium and at this point, leave this to cook until the egg starts to bubble and looks thick and not opaque
Take a spatula flip the omelette and cook the other side for a minute until it is cooked through – lay out toppings on a tray and let your child pick out how they’d like to top their ‘pizza’
Note:
Sometimes we add a sprinkle of Violife dairy free cheese as a treat.
