Sheet Pan Fajitas

Another great way to get some nutritious flavoursome protein and veg into your diet. One of my children's favs that ends with their plates clear every time.

INGREDIENTS

  • 500 g Organic chicken breast Thinly sliced

  • 3 Bell peppers Thinly sliced

  • 1 Large red or white onion Thinly sliced

  • 2 tbsp Avacado oil

  • 1 tbsp Dried cumin

  • 1 tbsp Garlic powder

  • 1 tsp Dried oregano

  • 1 tsp Dried coriander

  • 1 Handful Fresh coriander For serving

  • 1 Lime for juice

  • Smoked paprika To add afterPreheat your oven to 200/400/gas mark 6

  • Place your onion, peppers and chicken on a large sheet pan

  • Stir together the spices, salt and pepper in a small bowl

  • Drizzle everything with avocado oil, followed by the spice mixture

  • Use your hands to toss until evenly coated

  • Bake in the oven for 15 minutes until chicken is cooked through

  • Serve with fresh coriander and lime juice sprinkled on top and lettuce or cassava wraps/ avocado/ hummus/ guac/ salsa

Note:

If your child has issues with histamine it is best to add smoked paprika AFTER to your own meal. Smoked paprika gives the smoky flavour in fajita seasoning
